2 Tbsp olive oil2 lbs beef roast (chuck or whatever you prefer), chopped in large chunks1 large onion, peeled1/2 glass of red wine1 Tbsp flour1 Tbsp paprikaBeef broth1 Tbsp tomato sauceSalt
Put the oil in a large saucepan and as soon as it's hot, add the meat, and brown on low heat. In the meantime, thinly slice the onion, add it to the meat, and let it blend in. Add the wine and as soon as it's evaporated, sprinkle in the flour and the paprika. Stir everything briskly with a large spoon. Dilute the tomato sauce in the hot broth and add to the meat. Add the salt (to taste) and cook for a couple of hours, on very low heat, until the meat is very soft. If necessary, add more hot broth throughout, to prevent drying.
