Ingredients
Directions
1/4 cup honey or agave nectar3 tablespoons vegetable oil3 tablespoons apple cider vinegar1/4 teaspoon salt1 teaspoon ground black pepper 4 cups shredded green cabbage2 2/3 cups shredded red cabbage1/2 cup thinly sliced green onion2 carrots, peeled and shredded1 cup minced red bell pepper
In a large bowl, whisk together the honey, vegetable oil, vinegar, salt and pepper. Add green and red cabbage, green onion, carrots and red pepper. Toss to coat evenly. Cover and refrigerate several hours before serving.
TIP: I like to "salt" the cabbage first by putting all the cabbage in a collander in the sink and toss with a couple Tbs of salt. Leave for a few hours and then thoroughly rinse all the salt off and squeeze the water out of the cabbage. This removes all the water and leaves the cabbage ready to soak up the vinagrette. It also keeps a puddle from forming in the bottom of the bowl.
