one dish couscous medley

8 oz boneless skinless chicken breast, cooked and diced1 tbsp olive oil2 cloves garlic, pressed1 med zucchini, diced (about 1.5 cups)1 c diced onion1 c chopped mushrooms2 oz (handfull) grape tomatoes, sliced or cut in half1 1/4 c low sodium chicken broth1 box Garlic and Oil whole wheat Couscous (Near East brand)1/2 c fresh parsley, finely chopped1/2 c feta cheese
Dice up leftover chicken breast (you can use raw, but in that case start cooking the chicken pieces several minutes ahead of everything else)
Heat olive oil over med heat and add onions and garlic. Sautee for about 5 minutes and then add zucchini, mushrooms, tomatoes and cooked chicken.
Cook until vegetables are just softened and pour in chicken broth and spice packet from box of couscous
Bring to a boil and stir in couscous.
Remove from heat, cover, and let stand 5 minutes
Stir in feta cheese and parsley
