Eggplant Sabzi - Punjabi Style

Eggplant, fresh, 7 cup, cubedRed Potato, 3 medium, peeled and cubedonion, raw, 1 cup choppedTomato, 1 large, dicedOlive Oil, 0.25 cupSalt 2.5 tspTurmeric, ground 2 tspPepper, red or cayenne ground, 2 tspGaram Masala Indian Spice Mix, 2 tspGarlic, 3 cloves, minced
In a covered pot, on medium heat saute onions until clear, add tomatoes and spices (salt, pepper, turmeric powder, minced garlic). Cover and cook the onions and tomatoes until soft. Add eggplant and potatoes, stir together and cover. Cook at medium-low heat until eggplant is soft, about 20 minutes. Stir occasionally. Makes 8 1 cup servings.
