Puy Lentil Salad

Ingredients

300g Puy Lentils1 clove of Garlic 2 tbsp Balsamic Vinegar or Red Wine Vinegar2 tbsp Olive Oil4 tbsp Shallots (or red onion) finely chopped
Use 1 1/2 cups of water or broth to 1 cup of lentils.
Add water to a saucepan
Add the clove of garlic to the water.
Do not add salt until the lentils are cook because the salt will toughen them if added at the beginning of the cooking time.
Bring water to a boil and add the lentils. Boil for 2 or 3 minutes and then reduce heat to a simmer. Cook for approximately 30 minutes or until tender.
Once cooked drain the lentils and let cool for a few minutes.
Mix together the Olive Oil, Balsamic vinegar and shallot in a bowl.
Add the lentils to the dressing and mix.
Add salt and pepper to taste.
