1 cup dry quinoa1 can red kidney beans1 can black beans1 can white canellini beans1 can pinto beans1 large can crushed tomatoes7 cloves garlic1 large raw onion, diced2 Tbsp Olive oil1 cube rapunzel vegan bouillion2 cups water
Heat olive oil in a large pot.
Add onions and cook until they begin to turn translucent.
Add garlic and cook until garlic is golden.
Add water, bring to boil, and add bouillion.
Add remaining ingredients and keep at a low boil for 30 minutes, stirring often, until quinoa is fully cooked. Add more water/broth if needed.
Makes 12 servings, just under a cup each.
