Ingredients
15 ounces canned pumpkin 1 package no fat no sugar instant vanilla pudding 1/2 cup 1% milk 1 8oz. container cool whip light 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger
Directions
blend ingredients together in a large bowl, chill in refrigerator for at least an hour makes 10 1/2 cup servings

    If you are a pumpkin lover, this recipe is for you. It's SUPER FAST, super easy and tastes great. I used skim milk and half the amount of light Cool Whip (and added 1/2 tsp. nutmeg) - and it still tasted great, but even had less fat/sugar in it. GREAT RECIPE! - 10/27/07
