Stove Top Ground Turkey Lasagna

Ingredients
Directions
1 lb ground turkey1 sm onion3 minced garlic cloves1 oz can tomato sauce1 tbsp basil leaves (dried)1 tsp oregano 1 tsp salt1 1/4 cup water2 1/2 cups of broken lagsana noodles (whole wheat)1 cup fat free cottage cheese1/4 gratedparm cheese1 eggMozzarella fat free cheese (shredded)
In a large skillet, brown beef with onions and garlic. Drain.
Add tomatoes, water, tomato sauce, parsley, basil, oregano, and salt.
Stir in uncooked pasta.
Bring to a boil, stirring occasionally.
Reduce heat, cover and simmer for 20 minutes or until pasta is tender.
Combine cottage and Parmesan cheeses.
Mix in the egg.
Sprinkle in basil and pepper to taste.
Drop cheese mixture by rounded tablespoons onto pasta mixture.
Cover and cook for 5 minutes more.
Sprinkle with shredded mozzarella and serve.

Used 3 tsp & 1 tbsp of minced garlic, 1 8-oz can of tomato sauce with roasted garlic, 1 3/4 cups of water, 8 lasagna strips, 1/4 cup grated parm cheese, ricotta (instead of cottage cheese), 14 1/2 oz can of diced tomatoes w/ green pepper & onion, 2 tsp of parsley, & 2 tsp of chile peppers. I made it for Sunday dinner and it was a hit! I was a little confused with the directions as tomatoes & parsley are not in the ingredients (used ~ 1tsp parsley & chopped a vine tomato). I assumed the 1 oz can of tomato sauce is a misprint and used a 15 oz can instead. Also used 2 cups noodles. YUM! - 3/10/08
