Barbecued Seitan Ribz

Ingredients
1 cup vital wheat gluten2 teaspoons smoked Spanish paprika2 tablespoons nutritional yeast2 teaspoons onion powder1 teaspoon garlic powder3/4 cup water2 tablespoons tahini or other nut butter1 teaspoon Liquid Smoke1 tablespoon soy sauceabout 1 cup of your favorite barbecue sauce
Directions
1. Preheat the oven to 350°
2. Lightly spray an 8x8 baking dish with canola oil.
3. Mix the first 5 ingredients together in a large bowl.
4. Mix the water with the nut butter, Liquid Smoke, and soy sauce and add it to the dry ingredients.
5. Stir to mix well and then knead lightly in the bowl for a couple of minutes
6. Put the dough into the baking dish and flatten it so that it evenly fills the pan. (This is harder than it sounds, so don't get frustrated)
7. Take a sharp knife and cut it into 5 strips; then turn the pan and cut those strips in half to form 10 pieces..
8. Put it in the oven and bake for 25 minutes.
9. Remove it from the oven and carefully re-cut each strip, going over each cut to make sure that the ribz will pull apart easily later.
10. Pour barbecue sauce into pan with ribz and flip to sufficiently coat.
11. Let stand for 15-30 minutes to allow barbecue sauce to marinate into ribz.
12. Preheat grill over medium heat, using foil on gril.
13. Place ribz onto foil on grill and sear them to seal in the flavor.
14. Flip after a few minutes, until brown or to taste, adding more barbecue sauce if nececessary.
15. Remove from grill and serve.
