Vegetarian Chilli (french style)

1 cup chopped onion1 clove garlic1 cup chopped celery2 cups chopped mushrooms1 cup chopped cabage1 tin red kidney beans2 tins chopped tomatoes1 tin sweetocrn2 vegie stock cubes in 400ml boiling water200ml soy milk (Alpro soya light used here)tsp brown sugarchilli flakes, red pepper and salt to tste
Fry the onions and garlic together until translucent, then add the other vegetables. Saute for a few minutes until cooked through then add the quorn mince and cook for a few minutes more.
Add the remaining ingredients and simmer over a low heat for 30mins. Season to taste.
This makes 8 1.5 cup servings.
