1 cup quinoa, rinsed, and drained3 cups mushrooms, whole3 cups grape tomatoes, whole2 baby eggplants, salted, drained and rinsed2 yellow peppers, cut in quarters1 poblano pepper, halved and seeded1 onion, quarteredHot Chili SauceSoy Sauce
Cook the quinoa according to package instructions. Skewer the mushrooms, tomatoes, eggplants, and onions on metal skewers. Grill the veggies on a hot grill. Serve the veggies over 1/2 cup of quinoa. Add Hot Chili Sauce and soy sauce to taste.
