Cauliflower and lentil pilaf

Peanut Oil, 2 tbsp Onions, raw, 1 small finely choppedCauliflower, raw, .5 head, medium (5-6" dia) cut into floweretsBrown Lentils, 400 grams (1 can) rinsedWhite Rice, long grain, 250 grams vegie stock -3 cupscinnamon quilltwo bay leavesmild curry paste, 2 tbsp
heat oil in a medium pan
fry onion for five mins then add cauliflower and rice and cook, stirring for two minutes.
Add curry paste and stir for a further minute
Add stock, bay leaves and cinnamon quill and bring to boil
reduce heat to low, cover and cook for 15 mins, or until rice is cooked and all the liquid is absorbed
fluff rice with fork and add lentils
serve with chopped coriander and chutney.
