Pancakes - low carb

Ingredients
4 large eggs1/2 cup ricotta cheese1 packet sugar substitute 1 tsp vanilla (optional)
Directions
Makes 2 servings - 2 cakes each

Mix cheese, sugar substitute and vanilla in a medium bowl.
Add eggs and blend.
Spray non-stick skillet with Pam.
Pour about 1/4 cup mix into heated skillet.
Cook until set then flip.
May enjoy with berries or other fruit of your choice.
