1 lb extra lean ground beef2 egg whites1/2 cups oatszuchinni shredded to make 1 cup (slice balance of zucchini for later use)1 small onion chopped2 cloves garlic minced2 tblsp nonfat milk1 small red bell pepper diced small1/4 tsp basil, oregano, salt and pepper or to tasteglaze1/4 cup ketchup2 tsp mustard1 tsp brown sugar
preheat oven 350 combine all ingredients except glaze combine well place on cookie sheet sprayed with pam place sliced zuchinni around meatloaf bake 55 minutes add glaze continue bakgin 10-15 minutes
