pork cacciatore with brown rice

Ingredients
1 tbs. olive oil1 medium onion chopped 1/2 cup sliced mushrooms1 1/2 tsp. minced garlic8oz. peppercorn pork tenderloinsea salt to taste (very light)1 tsp Italian Seasoning3 cups medium grain Brown Rice
Directions
1. Prepare rice according to pacage directions.
2. Heat oil in large skillet over medium high heat. add onion mushrooms & garlic. Cook for 3 minutes stirring occasionaly until softened.
3.Stir in tomatoes pork Italian seasoning salt & sugar. Cover & simmer on medium low, stirring occasionally for 10 minutes.
4. Serve over cooked rice

    Just wondering how much and what kind of tomatoes to use? They are not in the ingredient list but mentioned in the instructions :) - 10/1/09
