Chicken - Chipotle Sausage & Chicken Gumbo

3 chicken sausages (approx. 1 lb), chopped6 oz boneless, skinless chicken breasts, chopped1 large can diced tomatoes, no salt added2 tsp minced garlic1 C celery, diced1 C onion, diced1 C bell pepper, red, diced1 C bell pepper, yellow, diced1 C spinach, chopped1 tsp Mrs. Dash (no salt) Cajun seasoning1 Tbsp oregano1 Tbsp basil1 Tbsp thyme2 tsp tobasco sauce
1. Cook chicken and sausage, put aside.
2. Saute the garlic, celery, onion, spinach and peppers until just cooked.
3. Stir in the tomatoes (do not drain), broth and seasoning. Cover and simmer for 10-15 minutes.
4. Add chicken and sausage and simmer until heated through.
Serve over rice.
