Creamy Potato Soup

Ingredients
10 medium potatoes, peeled and sliced or diced7 cups water2 T. Chopped Dried Onions1 t. salt2 T. Butter (or margarine)2 T. Spelt or Whole Wheat Flour1 T. Dried Parsley Flakes1/2 t. Lawry's Garlic Salt1/3 t. Black Pepper
Directions
Put potatoes, water, dried onions and salt into a large saucepan and bring to a boil. Reduce heat to medium and cook until potatoes are tender (about 20 minutes).

Remove from heat. Using a ladel, put as much of the liquid and at least half of the potatoes into a blender (if you have a small blender you might have to do this in two tries).

Add to blender the butter and flour.

Start your blender on low, then slowly turn to high. Blend until smooth, but not frothy. In a Vita-Mix this takes about 40 seconds, in a regular blender about 1-2 minutes.

Return to pan and add remaining ingredients. Bring to a low boil, and simmer about 3 minutes.

Serve with crackers! Enjoy!
