Tomato Curry

Ingredients
1 14.5 oz can diced tomatoes1 cup chopped onions1/4 cup shredded coconut5 cloves garlic, minced1 tsp olive oil1 TBS Indian curry powder1/2 tsp garam masala1 tsp salt
Directions
Saute onions and garlic in olive oil until onions are tender. Add curry powder and garam masala; mix well. Add tomatoes, coconut, and water, simmer over medium-low heat until sauce thickens.
