Low Carb Tabouli

Ingredients
2 cups cooked lentils2 bunches parsley, finely chopped1 medium onion, choppedsalt and pepper to taste5 cloves garlic (more or less according to your taste)2 T olive oil1/4 Cup lemon juice
Directions
Mix all ingredients together. Tastes best if allowed to set in refridgerator an hour before serving. Can also add chopped tomatoes (I can't have them because they increase insulin levels). Serving size is appox. 1/4 Cup
