Chicken Breast, no skin, 12 ounces *Coconut Milk, 1 tbsp Curry powder, 1 tsp White Rice, long grain, .75 cup White Wine, 2 fl oz Peas, frozen, 0.25 cup Garlic, .5 tsp Scallions, raw, 1 tbsp chopped Chicken Broth, 2 fl oz Olive Oil, 1 1tsp Butter, salted, 2 pat (1" sq, 1/3" high)Salt, 2 dash
Cook rice with water and a dash of salt
Cut up chicken in bite size pieces
Coat with curry powder
Melt 1-tsp butter butter in pan on Med-Hi
Saute chicken until outer pink in gone
Remove chicken from pan
Add 1-tsp butter and 1-tsp oil to pan
Add wine, broth, more curry powder and salt
Stir 1 min
Add coconut milk, frozen peas, and return chicken to pan
Cooked 2-4 more minutes
Serve with fresh chopped scallions over rice
