Ingredients
4 Roma Tomatoes6 oz Part Skim Mozzarella2 tbsp Balsamic Vinegar1 tbsp Extra Virgin Olive OilCracked Peppercorn (works MUCH better than just ground black pepper)Salt
Directions
This recipe makes two large servings (or, if you wish, four very small servings). Slice the roma tomatoes and slice the mozzarella. You want similarly-sized slices (although some imperfection makes it better!). Take the plates where you will place the salad and splash with about 1/2 tbsp olive oil and then dash with sea salt (much better than table salt, I swear!). Stack the mozzarella and the tomato slices alternately, beginning with tomato. Once stacked, grind pepper from a mill over the top of the tower and then dash (a slightly smaller dash now) with sea salt. Then, provide balsamic vinegar as a dressing (I think it's better when the person eating it gets to decide how much and where). And that's it! Very simple, fresh, and yummy (one of my favorites).
