Mom's Famous Zucchini

Ingredients
1 tbsp coconut oil1 medium onion,sliced1 tsp thyme1 tsp oregano4 cups zucchini, sliced6 garlic cloves, minced
Directions
Melt coconut oil in a large skillet over medium high heat.

Add onion, thyme and oregano and saute for 2 minutes or until onions are tender.

Add zucchini and cook for 5 minutes, stirring constantly. If zucchini or onions begin to stick add a small amount of water to the skillet.

Once zucchini are tender, turn off heat, add minced garlic, stir vegetables, cover skillet and allow to sit for 1 minute.

Serve immediately.

    Had to use olive oil, didn't have coconut oil on hand. Easy & tasty way to use zucchini. We love garlic so this was perfect for us. - 10/18/09
