Crock Pot Chicken Tortilla Soup

Ingredients
3 boneless/skinless chicken breasts2 cans Rotel tomatoes, mild2 cans black beans, rinsed1 can no salt added corn, drained1 large onion, chopped1/2 cup bell pepper, chopped2 cloves garlic, minced48 oz. Fat Free, low sodium chicken broth3/4 tsp. Tony Chachere's2 tsp. chili powder1 1/2 tsp. ground cuminground pepper to taste4 oz. reduced fat cream cheese (optional)8Tbsp reduced fat mexican blend cheese, shredded (optional)Tostitos Baked chips, about 3/4 oz. per serving (optional)
Directions
Put chicken (frozen), tomatoes, rinsed beans, drained corn, onion, bell pepper, garlic, Tony's, chili powder, ground cumin, blk. pepper in crock pot. Pour broth over ingredients making sure everything is covered in liquid, especially chicken. Cook on low 6 hours. Shred/chop chicken. Stir in cream cheese (optional). Serve with baked tortilla chips and top with 1 tbsp. shredded cheese (optional). Serves 8. Nutrition Facts are with all options mentioned.
