Crunchy Granola

Ingredients
Brown Sugar, 3/4 cupWater, 1/4 cupVanilla Extract, 3 tspKosher Salt, 1 tspOld Fashioned Oats, 4 cupsChopped Pecans, 1 cup
Directions
Makes 20 Servings. One Serving is 1/2 Cup.

Preheat oven to 275 degrees.
Chop pecans (if needed - I keep a big bag in the fridge)
Combime oats and pecans in a large mixing bowl.
In a separate microwave proof bowl combine brown sugar & water.
Microwave on high for 1 minute or until sugar is completely dissolved.
Remove from microwave. Add vanilla extract & salt to this bowl.
Pour mixture over oats & nuts. Stir well.
Pour granola onto a large cookie sheet (or 2 small ones). Spread into a thin layer.
Bake 45 minutes to 1 hour until granola is golden & somewhat crunchy.
As it cool, it will become more crunchy.
Break apart & store in an airtight container.
