My Secret Crispy Shake & Bake Chicken

2 boneless, skinless chicken breasts, cut in half and trimmed of fat20 small round Vegetable crackers (I use PC, I love them)cooking spray
Serves 4.
Place the crackers in a sealable bag and crush them finely. (I roll a large can of tomatoes over them until they are crushed.) Place chicken, one piece at a time in bag, seal and shake. Place on a lightly sprayed baking sheet. Bake in a preheated 350 F oven, for 45 minutes to an hour, until chicken is cooked through. Serve with rice or potatoes, or my favorite, a large spinach salad.
