Whole Grain Corn Bread

Ingredients
1 cup whole wheat flour1 cup stone ground cornmeal1 tbsp. baking powder1/2 tsp. salt2 tbsp. honey1 egg1 cup buttermilk (or 1 cup lowfat milk mixed with 1 tsp. lemon juice)1/4 cup unsalted butter
Directions
Preheat oven to 350 degrees F.

Mix flour, cornmeal, salt, and baking powder.

In a separate bowl, mix the milk, honey and egg. Add the wet ingredients to the dry and mix thoroughly.

Stir in the melted butter.

Bake in a greased pie pan for 20-25 minutes or until a toothpick comes out clean.
