Tofu, extra firm, 1 blockChickpeas (garbanzo beans), 1/2 canBroccoli, fresh, 2 cups, choppedTrader Joe's Southern Greens Blend, 1 cupOnions, raw, approx. 2 tbspTrader Joe's Curry Simmer Sauce, 1 jar
Pre-heat oven to 425 degrees F. Slice tofu into strips, and bake on a tray sprayed with nonfat, nonstick cooking spray for 20-30 minutes, pausing midway to flip the tofu pieces. Cut up broccoli, greens, and onions. When tofu looks dry and has a light golden crust, remove it. Dump curry sauce into medium-sized pot, along with all the other ingredients. Simmer all ingredients until broccoli is slightly crisp and a deep green. Serve over rice. Makes 4 servings.
