LucidAnne's Lentil Rice Salad (vegweb recipe)

Ingredients
1 cup dry brown lentils2 cups beggie broth1 cup brown rice1 carrot, diced1 zucchini, diced1 onion, diced1 celery stalk, diced1/4 cup olive oil1/4 cup red wine vinegar3 cloves garlic, crushed1 tsp. chili powder1 tsp. oregano1/4 tsp. ground cumin1/4 tsp. cayenne pepperdash black pepper
Directions
Cook lentil in vegetable broth. If they are absorbing all of the liquid, add water. Drain off extra liquid when lentils are cooked. In a separate pot, cook brown rice in 2 1/2 cups water. Again, if any liquid remains after cooking, drain it off. Cool slightly.
Add 1/4 cup water to a pan & heat to med. Add the vegetables & saute slightly. Miss the dressing ingredients well. Combine lentils, rice & vegetables. Add dressing & stir well. Refrigerate. Even better the second day.

Note-the nutritional information is based on a 1 cup serving size.
