Keilbasa, Cheddar & Hash Brown Bake

Ingredients
8 cups frozen shredded hash brown potatoes, thawed 8 oz. Sliced Keilbasa3/4 cup chopped onion 12 eggs 1 cup fat free milk 2 T. Dried parsley 1 tsp. salt 1/2 tsp. pepper 1 cup (4 oz.) shredded reduced fat cheddar cheese
Directions
Press hash browns onto the bottom and up the sides of a greased 13 in. x 9 in. baking dish. In a skillet, saute onion until soft. Layer keilbasa over hashbrowns and then spoon on the onions. In a large bowl, beat the eggs, milk, parsley, salt and pepper. Pour over sausage mixture. Cover and bake at 350ºF for 35 minutes. Uncover; bake 20-25 minutes longer or until center is set. Sprinkle with cheese; bake 5 minutes longer or until cheese is melted. Let stand 5 minutes before cutting.

Options: For a spicier dish, add 1/2 teaspoon red pepper flakes to egg mixture.

    This was absolutely delicious. I skipped the onions cause my kids don't like them. This is a keeper. Only thing I would do different is that I am hispanic so I would probably add some Goya Adobo next time. Thanks for sharing. - 8/2/15
