Healthified Meatloaf & Potatoes

Ingredients
1/4 tsp canola oil1/4 tsp garlic - minced1/4 c each of carrots, red pepper, celery, and onion - finely chopped1 lb lean beef - ground1/4 c parmesan cheese - shredded1/4 c vegetable broth1 large egg1 c lentils - cooked6 Yukon Gold potatoes - cut in quarters
Directions
*Preheat oven to 350 degrees
*Heat oil in pan over medium heat
*Add garlic and vegetables and saute for 4 minutes
*In large bowl, break up beef and add vegetables, cheese, broth and egg. Mix
*Add lentils. Mix
*Spray loaf pan with non-stick spray
*Place meat mixture in pan and push down
*Bake 35 minutes or until internal temp is 140 degrees
*While baking, boil potatoes for about 30 minutes until tender. Can mash or serve as is quartered
*After removing from oven, meatloaf can 'rest' for 15 minutes before slicing
