Morning Vanilla Crepes

Ingredients
2 eggs1 cup Soy Milk2/3 cup all-purpose flour1 pinch salt1 1/2 teaspoons vegetable oil1 tbsp Vanilla Extract1 tsp Cinnamon1/4 tsp Nutmeg
Directions
1. Combine all ingredients into a blender and process until smooth. Leave in the refridgerator for an hour or preferably overnight.

2. Strain batter with a small colander.

3. Heat a medium skillet over medium high heat. Brush with oil. Pour in 1/4 cup of batter into heated pan tilting to allow batter to completely coat bottom of pan. Let cook 2-5 minutes, or until golden, flipping them over once. Serve warm.
