Zucchini, Broccoli & Spinach Saute

Ingredients
2 zucchini2 summer squash3 - 4 broccoli spears1 pkg fresh spinach1 onion1 tbsp extra-virgin olive oilsalt & pepper to tastered pepper flakes
Directions
Cut zucchini and squash into bite-size pieces. Dice onion. Cut up broccoli. Wash spinach.

Pre-heat saute pan, add olive oil. Add onions, zucchini, squash. Add salt/pepper/red pepper flakes. Saute for 5-7 min. Add broccoli. Saute another 5 min. Just before they're done, add spinach. Cover and let simmer for 3 min.

Makes 6 servings

    This is a great combo. I added some chopped red bell pepper and a few sliced mushrooms. 1 Tbsp oil is really a bit much. I will try with 1/2 Tbsp next time. Ingredient list has 1 tsp salt, 1 tsp pepper & 1 tsp red pepper flakes. Too much sodium. I didn't add salt at all...still great. - 8/2/09

    Thanks for the comments! When I put the ingredients list together, I forgot you could do .5 instead of 1 - so thanks to you, I have revised the ingredients list.
