Jo's Veggie Breakfast Cups

1 pint egg whites3 lg eggs1 bell pepper2 roma tomatos1 zucchini
Directions
Beat eggs & egg whites together, dice up veggies and stir in. Salt and pepper to taste. Spray muffin tins (or other such container) and fill, bake for 30-40 minutes
