WLS Tiny White Pizza

Ingredients
1 medium flour tortilla3 oz fresh mozzarella cheese, sliced1/4 cup spinach2 Tbsp alfredo sauce
Directions
Take a medium sized flour tortilla and add 2 Tbsp of alfredo sauce and spread evenly. Add the spinach (frozen [thawed], fresh, or canned) evenly. Then add the thinly sliced circles of mozzarella cheese. If you'd like, add some cilantro to the top for greenery.

Put on a pizza pan in a preheated 420 oven and bake for 10 minutes. The edges should be crispy and brown.

Makes 4 small slices, perfect for the WLS patient. To lower the carbs, you can make it on a smaller low-carb tortilla. I did that once with a BBQ chicken pizza & it was a mess. I really like the flour ones for small pizzas.
