Multi Grain Tabouli

Ingredients
Salad:2 cup cooked Basmati rice, barley, couscous, bulgar, quinoa or a combination to make the 1 cup 1/2 cup dried apricots, chopped1/2 cup raisins1/2 cup drained chickpeas1 cup green peppers, chopped1 cup red peppers, chopped1/2 cup English cucumber, chopped4 green onion, chopped1/2 cup fresh parsley or celantro1/4 cup mint3 oz feta cheeseDressing: 1/3 cup orange juice (I like to use half concentrate and half water for stronger flavor)3 tbsp red wine vinegar1 tbsp extra virgin olive oil2 cloves garlic1 tbsp honey1/2 tsp pepper
Directions
Cooking time depends on the grains that you are using. It is a great way to use up grains you have in the fridge. Chill grains if not already cold. Combine all the vegetables, feta and fruit. Mix dressing ingredients and pour over salad. Chill and serve.
