2 large bell peppers, any color, chopped2 medium tomatoes--use different colors if you can, chopped1 medium yellow onion, choppedany herbs you want (I use 6 basil leaves and 1 T. oregano)1 tsp minced garlic2 T. olive oilopt: mushrooms to tasteopt: hot pepper to taste
Put bell pepper in skillet with olive oil and saute until nearly soft. Add onion (and mushrooms if desired). When onion's soft, add tomato, garlic and herbs (pepper if desired). Saute just until flavors blend and a bit of "sauce" forms.
