Ingredients
.5 cups onions5 eggs1 cup cheddar cheese1 cup grated summer squash
Directions
Saute onions in olive oil. Mix the rest in a bowl together. Mix in onions into the bowl and pour into a baking dish. Bake at 350 for 30 minutes or until the center in cooked.

    This casserole is very good. I used dried onion flakes instead of sauteed onions as I was out of onions and I added a little garlic powder as well for flavor. I didn't think I put but 1 cup worth on my plate, but I only have 3 servings left. No where 9 servings. Will make again for sure! Thanks :) - 8/20/09
