Tomato Basil Soup

Ingredients
1 T Olive oil1/2 C Leeks, sliced thin4 C Cherry Tomatoes8 Sprigs Basil2 C Chicken BrothTT Sea SaltTT Pepper2 oz Heavy whipping cream
Directions
Heat olive oil in a stock pot and saute leeks until soft. Toss in cherry tomatoes and basil and saute for 2 minutes. Cover with chicken broth and let simmer 30 minutes. Pour soup into a blender and puree. Strain soup back into a pot and return to a simmer. Stir in heavy cream and season to taste with salt and pepper. Serve garnish with chiffonade of fresh basil.
