Hamburger & Black Bean Burrito Filling - Low Sodium

Ingredients
1 T. Olive Oil1 Medium onion, diced2 t. Chopped garlic1 Bell pepper, chopped1 (14.5 oz.) Can low sodium black beans, rinsed & drained1 lb Ground beef, cooked1 T. Ground cumin1 t. Paprika1 T. Chili powder1 T. Ground coriander1 C. Low Sodium V8 Juice
Directions
Heat olive oil in a medium skillet over medium heat. Stir in onion, garlic and bell pepper; cook until tender. Mix in remaining ingredients. Cook about 5 minutes until excess liquid has reduced.

Serve with tortilla wraps, rice, salsa, shredded cheese, sour cream.

Makes 10 1/2 cup servings.
