moosewood zucchini-nut bread

1 c vegetable oil1 c brown sugar3 eggs1 T vanilla extract2 c grated zucchini1 1/2 c whole wheat (pastry) flour1 1/2 c white flour1 t cinnamon1 t salt1 t baking powder1/2 t baking soda1 c coarsely chopped walnuts 1 c raisins
preheat oven to 325*
oil two 5"x9" loaf pans
in a large bowl, combine oil and sugar
add eggs one at a time
stir in vanilla
stir in zucchini
in a small bowl, sift together flours, cinnamon, salt, baking powder, and baking soda.
stir dry ingredients into oil and egg mixture until just moistened.
fold in raisins and walnuts.
spoon batter into prepared pans.
bake ~1 hour until knife inserted into center comes out clean
