Mexican stir-fry

Ingredients
2 tblsp olive oilone glove garlic, crushed1 cup sliced red onion1 cup sliced yellow squash1 cup sliced zucchini1 cup sliced or chopped red bell pepper1 cup sliced or chopped green bell pepper2 cups chopped cooked chicken breastsalt, pepper, and crushed red pepper (add to taste)1 cup chopped tomato1 cup low-fat cheddar or pepper jack cheese.
Directions
Cook all vegetables in skillet(except tomatoes) in olive oil until crisp-tender. Add chicken breast, salt, pepper, and crushed red pepper-cooked until heated through. Remove from heat, sprinkle with tomatos and cheese. Serve on top of spanish rice and a side of low-fat refried beans.
