Mustard Pork Chops & Taters-Slow Cooker

Ingredients
Olive Oil, 1 tbsp8 boneless pork loin chops1 can Low Fat Cream of Mushroom Soup1/4 c Chicken Broth1/4 c Dijon MustardGarlic, 1 clove1/2 t Thyme1/4 t Black Pepper 1 med Yellow Onion (Yellow), sliced thin5 medium potato, sliced thin
Directions
Heat oil in large skillet over medium heat. Add pork chops and brown on both sides; drain. Combine soup, chicken broth, mustard,garlic, thyme and pepper in slow cooker. Add potatoes and onion stirring to coat. Arrange pork chops on top of potatoes. Cover and cook on low setting for 8 - 10 hours or on high setting for 4 - 5 hours. Serves 8

    Tried this last week, and my DH loved it. The potatoes in mustard sauce make him think of German food. I really like it, too! I used a recipe to replace the condensed soup to reduce the sodium, and it turned out great. - 1/12/10
