Creamy Crockpot Potato Soup

Ingredients
5 cups diced red potatoes1 small onion, chopped7 cloves garlic, smashed4 cups water - or more as needed2 low-sodium boullion cubesSalt and pepper to taste
Directions
Put all of the ingredients in a crockpot and cover with water. Turn crockpot to high and cook for 4 hours or until potatoes are tender.
Using an immersion blender or standing blender, puree the soup and return to the crockpot for 10-20 minutes.
