Low fat Potato Soup

5 lbs. potatoes, peeled and chopped2 stalks celery, chopped1 small onion, chopped6 baby carrots (grated for color)1 pkg (8 oz) neufchatel cheese or 1/3 less fat cream cheese2 small (14oz) cans of chicken brothchicken soup base
Heat two cans of broth to boiling. Add the onion, celery, carrots, and 1/2 of the potatoes. Add a shake of salt and pepper (to taste). Make sure that all vegetables are barely covered with the broth, add water if necessary. Boil until soft. Add the rest of the potatoes and 1-2 Tbs. of chicken soup base (to taste). Boil until the rest of the potatoes are soft but not mushy. Remove from heat and wait five minutes. Fold in the cream cheese.
