3 Tbsp. Butter1 cup onion diced6 cloves garlic minced2 whole bay leaves1/2 tsp. thyme1/2 tsp. black pepper1/2 tsp. Tobasco2 Tbsp. chopped parsley2 cups rice3 cups chicken broth (optional: water)
Melt butter in a 3 qt. saucepan. On medium heat add onion and saute a few minutes til soft. Add garlic. Cook and stir another couple of minutes. Add spices and rice and cook til all is sizzling hot and browning on the bottom of pan. Increase heat to med-high if necessary but watch carefully. When light brown add parslet and broth. Stir well bringing to a boil. Cover and cook on low for 17 minutes. Remove pan from heat, don't open for 5 minutes. Stir and serve hot. Oh! remove the bay leaves. Makes 8- 1 Cup Servings
