Zucchini, Tomato and Sausage Casserole

225 grams of large pasta, rigatoni or penne or shells 1 tblsp olive oil1 pound (454 grams) Italian sausage1 small onion, chopped4 cloves of garlic, minced1 small green pepper, in thin strips1 large zucchini, chopped 2 large tomatoes, chopped salt and pepper1/4 cup grated cheese
Cook the pasta according to directions, and let sit in the hot pasta water if it is finished cooking before you finish with the rest.
Meanwhile, heat the olive oil in a large non-stick pan.
Remove the sausage meat from the casings, break it up and brown in the oil. Add the onion to soften, then the green pepper. Add the garlic, zucchini and tomato. Season with salt and pepper. Let it all soften, then add 1 cup of the pasta water and bring to a boil.
Remove the pasta with a slotted spoon from the water, and put it into a large shallow casserole dish. Spoon the sausage vegetable mixture over top. Sprinkle with cheese. Cover with foil and cook at 350 F for 30 minutes, then remove the foil and cook for another 30 minutes.
Serves 8.
