Emily's Meat Loaf, Vegan

1 small onion, chopped finely2 celery stalks1 garlic clove, minced1 tbsp olive oil2 slices wheat bread1 cup chopped walnuts1 cup prepared TVP--textured vegetable protein, or any vegan "beef"0.25 tsp ground pepper0.5 tsp oregano0.5 tsp basil1 tbsp nutrional yeast flakes1 tbsp tahini or any nut butter1 tbsp tamari2 tbsp vegan worcestershire sauce0.25 cup ketchup
Preheat oven to 350 degrees. Lightly oil an 8x10 pan. In a large saucepan, sautee the vegetables until onions are transluscent, then set aside. Blend the bred and walnuts in a food processor, set this aside also. In a large bowl, combine the vegetables and trhe "beef" mixture, basil, oregano, pepper, tahini, nutrtional yeast, tamari, worcestershire sauce, and faux cheese ( not added into recipe). Mix together, I find using my hand works best, then add bread, walnut mixture. Press into the pan, and bake for 30 minutes. Then take out and add ketchup ontop, and bake 15 minutes more. Remove from oven and let sit for 5 minutes. Serving--6

I found out about this recipe from a blog, where the person had served it to a meat lover, and he loved it, without knowing it didn't contain meat or dairy or eggs. Wanted to see if this was true, so made it last night and I was AMAZED. Totally true. Will be on my all-time faves' list. - 10/24/12
