2 johnsonville brats (grilled left overs)2 medium potatos2 TBS onion diced2 TBS green pepper diced2 TBS EV olive oil4 eggs, scrambled
heat oil in skillet, add and saute onions, peppers and brats
remove from heat and add diced potatos. cook on medium heat until soft (about 15 minutes) covered. Reduce heat. Add sausage and onion mixture and cook another 10 minutes until cooked through and potatos are done.
Meanwhile:
In a seperate pan, scramble eggs.
Put hash serving on plate and top with scrambled eggs.
Serves 2 to 4.
