1 Cup - Oatmeal, dry1 Cup - Walnuts, chopped1 1/2 Cups - Whole Wheat pastry flour or white whole wheat flour1/2 tsp each - cinnamon, nutmeg, allspice, cardamom1 tsp - baking soda1 dash - salt2 tbsp - lemon juice1/2 cup - canola oil1/2 cup - maple syrup
Combine and set aside wet ingredients (lemon, syrup & oil).
Coarsely chop oatmeal & nuts in a food processor.
Combine remaining dry ingredients in a bowl.
Add the oat/nut mixture to the dry ingredients.
Add the dry ingredients to wet ingredients and mix thoroughly.
Shape into cookies.
Bake at 350 degrees for 15-20 minutes.
