Simple Crepe

Ingredients
1 c all purpose flour1 large egg1 large egg yolk1.5 c fat free milk1 tbsp melted butter1/2 tsp vanilla extract1 pinch of salt
Directions
In a large bowl sift 1 cup of all purpose flour. To the flour add 1 egg and 1 egg yolk. Begin mixing with a whisk and slowly add 1 1/2 cup of fat free milk. To the mixture add 1 tbsp melted butter, 1 pinch of salt, and 1/2 tsp vanilla extract/flavoring. Let batter sit for 20 minutes to allow air bubbles to rise.

Heat 10'' skillet and coat with non-stick cooking spray. Add 1/4 cup of batter and spread around the bottom of the skillet. Let batter cook for approximately 60 second, flip, and let cook for another 60 second or until golden. Slide crepe out of skillet onto plate and top with desired fillings. Fold or roll crepe and enjoy!

Batter makes approximately 18 crepes.
